We make focazza using our own specially formulated dough using all natural ingredients, and baked in custom made carbon steel baking trays also made in North Carolina.

Polazza nothing like pizza

For an equally delicious experience, we make our gluten free polezza using a modified polenta recipe making it original not using fake dough and baked in custom made carbon steel baking trays also made in North Carolina.

What is moist, juicy, crispy and  delicious? Hot out of the oven, at room temp, or re-heated? Focazza and Polezza created to surely feed all your senses and taste buds.

Please don't judge us, we want to start making our own things our own food. Made here for people everywhere. Our own Mark. How can one call what they make Italian, Mexican, Chinese, French when they make it here for American taste? 

Focazza may be the best of both worlds. A little bit of Italian, a lot of American palate, using American and local fresh ingredients. Not Italian style because the Italians or anyone else don't make it like this.

Same with Palazza, why imitate when we can create. Yes, we use coarse corn meal like Polenta but, we treat it completely different. Why go out of our way to look for no-gluten flour to make an imitation dough that does not taste the same, not even close, when we can make something completely different and please both palates and health concerns.
